My Secret Cookie Recipe

These are my secret go to cookies. They take a big of prep time but the results are amazing. I always make a few batches as you can freeze the rolls for a couple of months and have cookies whenever you want.

  • Prep: 20 mins
  • Cook: 12 mins


1Cream the sugar and the butter together with the vanilla extract (I use a home-made one)until smooth. Easier in a mixer if you can.Sieve and whisk the flour, salt and baking powder together.

2Now mix one egg at a time into the creamed butter/sugar until well combined Gradually mix in the flour until combined.

3Now stir in the coarsely chopped chocolate of choice. Dark chocolate will generally have no lactose or dairy in it if it’s over 70%. Dark chocolate mixes are great. If you want to take a lactase pill then go with milk chocolate. One or two cookies shouldn’t have too much in.

4Wrap into logs. It should make about 3-4 good sized logs. Put them in the fridge. My trick is to use a sushi matt because I suck at getting them into log shapes otherwise.

5Now here is the key! Wait 24-36 hours. Seriously, some sciencey stuff happens and it makes them taste amazing. Something to do with cold baking or something. Anyway do it! But make a small batch to eat now too.

6Chop of about 1cm slices when you want to cook them and put them on a baking tray at 170c for 10mins. Turn the tray around after 5 minutes to make sure they get an even bake.

7Let them cook for about 15 minutes and enjoy.


2 1/2 cup Flour

1/2 tsp Baking Soda

1/8 tsp Salt

1 cup Unsalted Butter (Lactose Free)

1 cup Brown Sugar

3/4 cup Granulated Sugar

1 tsp Vanilla

2 Eggs (Large)

3-400 g Chocolate
